Another weekend has passed, thus I hope you had a safe weekend. Ballroom dance events filled two of our evenings and we ate well each evening. Therefore, I made one of my favorite soups Sunday evening: Bok Choy and Navy Bean Soup, a variation of a escarole and navy bean soup from a long-standing vegetarian restaurant in New Haven, Connecticut – Claire’s Corner Copia. (We have one of her cookbooks).
